We asked @tastycurls to create this Cacao, Baobab and Ginger Loaf Cake which uses delicious spices found in Africa and the Caribbean.
Ingredients:
Loaf cake:
3 ripe bananas 🍌
225g white spelt flour 🌾
100g coconut sugar 🥥
3 tsp baking powder ✨
3 tsp ginger powder 🧡
1-2 tbsp cacao powder 🍫
1 tbsp baobab powder 🍈
Ginger icing:
125g icing sugar
2-3 tbsp oat milk
2 tbsp stem of ginger syrup
Instructions:
- Preheat oven to 180C/356F.
- To a mixing bowl, add the dry ingredients for the loaf cake and mix together until all is combined.
- Add in the ripe bananas and mash together until you’ve created a smooth, thick batter.
- Pour batter into a 2lb loaf tin and smooth out evenly.
- Bake in oven for 25-30 minutes.
- Remove from oven and poke the middle with a tooth pick or knife. It should come out completely clean when it’s done. If there is still some batter residue, bake for a further 10-15 minutes.
- Allow cake to completely cool.
- In the the meantime, prepare the icing mixture.
- To a small mixing bowl, add all of the ingredients for the icing and stir until smooth. You may need to add either more oat milk or ginger syrup for it to slightly thicken.
- Once cake has completely cooled, drizzle or pour icing over the cake and spread evenly.
- Serve immediately or add some chopped walnuts and desiccated coconut.
